A hybrid egg product blends real egg components with plant-based binding, aerating, or emulsifying ingredients — legume proteins, aquafaba, or starch systems — within one formulation, rather than replacing egg entirely. The approach targets the two functions plant-based egg replacers still struggle with most: aeration in meringues and mousses, and consistent binding across bakery lines, where plant proteins excel at binding but can fall short on leavening, and some isolates carry an unwanted beany aftertaste.
Why Full Substitution Keeps Hitting a Ceiling
Full egg replacement remains technically difficult because no single plant system matches egg's combined binding, aerating, and emulsifying functions, which limits where fully egg-free products can be used. A central challenge in the European egg substitutes market is the technical difficulty of replicating egg's multifunctional properties, especially aeration and structure in delicate baked goods, which can require complex and costlier ingredient blends that limit consumer and manufacturer acceptance.

That volatility is precisely the kind of cost pressure that pushed hybrid meat into retail mainstream, and the same commercial logic applies to egg.
The EU plant-based eggs market is transitioning from a niche alternative segment toward a core part of the food ecosystem, with legume-based formulations dominating because they best replicate egg's texture, binding, and protein content. A hybrid formulation captures much of that legume-based innovation while retaining real egg's functional reliability — arguably the more commercially deployable version of the same underlying science.
Where the Category Is Already Half-Built
Bakery is the application where hybrid egg formulations are closest to shelf-ready, since suppliers already work across both real-egg and plant-based binding systems for the same customer base. Niche suppliers including SternLife, Roquette, and Avebe are carving out positions with pea protein, chickpea, and potato starch alternatives targeting Western European bakery and allergen-free segments, while PURATOS focuses on clean-label innovations for foodservice.
